Jasmine Tea Crème Brulée and the pursuit of laziness

Look under ‘lazy’ in my dictionary and you would probably find my alluring photo under there. My beautiful mugshot might also be found under ‘loudmouth’ and ‘procrastinator’. (Oh and ‘amazing’, but you knew that already hehe).

Relax, laugh with me people, for I’m also located under Joker and Smartass.

As much as I love to devote all my energy to tackling the hard stuff in the kitchen, a majority of the time, I’m all for quick and easy baking. I love lazy recipes and I’ve already blabbed on multiple times on this blog about how some recipe is awesome because it didn’t need me to, well you know, do anything.

But there are criteria that must be met before I personally declare a recipe ‘lazy-friendly’ in the House of Candy:

1) The recipe must not require any heavy machinery so put that Kitchenaid away. Scales, ovens and stovetops are exempt of course because try as I might, I simply can’t cook food with the power of my awesomeness alone.

2) A lot of my baking is done after dark, so my ideal lazy recipe is a quiet recipe. Lugging my appliances and ingredients to the study just so I can turn them on without waking anybody up is no fun. This is why point #1 is essential. 3) Did I mention no machinery? (Yes you did, now quiet about it!). Well maybe I should elaborate on that and stress use minimal equipment and utensils! Washing up 300 mixing bowls and 50 spatulas and pots isn’t my idea of a lazy time. Oh and if it requires a piping bag, then that’s a straight expulsion.

4) You might be keeping the Kitchenaid in storage but if it meant you’d have to tear your arms off whipping the shit out of your egg whites then what’s the point? The most ideal lazy recipe, requires little more than a stir, fold or a light whisk. 

5) Lots of steps usually equals lots of bowls (refer to point 3) so the less methods you have to do, the better.

6) The same can be said of ingredients. The less there are, the less time you will spend foraging for them and measuring it all.

Now from here, it’s all objective. Depending on your mood and cravings, the perfect lazy recipe cooking time would vary. Sometimes I find slow-baked stuff perfect while others, I’d want the dessert and I’d want it now. And then when it comes to inane tasks such as separating eggs, some people find it relaxing (me!), while others find it as tedious as mowing the lawn.

With that said and done, (I think this was the point to all that incessant rambling!), one of my favourite lazy recipes is a crème brulée. It’s the most relaxing thing I can make in the kitchen and it’s probably the number one culprit behind my obscene egg white collection (last count 64 whites!). But to make this lazy friendly, you’ll need an egg separator and a butane blowtorch. Not only is it fun to burn sugar but it cuts down on time and effort. And the egg separator allows me to separate 6 eggs in less than 45 seconds without worrying about shattering egg shells or breaking up the yolks.

Obviously everybody is different, so what’s lazy to me, would probably be irritating to another. So don’t start lynching me and saying, “pfft, brulee! How crazy are you woman?!”.

Now normally, you’d chill a cooked brulee before serving but if I had a bad craving, I’d happily skip this (it doesn’t take long to cool down at room temperature in winter anyway). In any case, I confess – I like my brulees warm.

Tonight’s number is flavoured with jasmine tea. I love tea flavoured desserts and in this case, the jasmine tea gives it the most beautifully subtle fragrance. You could substitute with green, black or earl grey tea but just bear in mind that ‘western’ teas can be a lot stronger so you’ll have to adjust the brewing time. I like it on its own but if you want to fancy it up, you can take a leaf out of Jacques Reymond and serve it with lychees that has been macerated with sugar syrup and spices. But would that revoke its lazy status? Allow me to ponder that as I eat…


Now I don’t normally ask questions of readers at the end of posts or expect you to answer, but I’m hugely curious (or just fishing for more lazy things to cook).

Jasmine Tea Creme Brulee 


100ml milk

220ml pouring cream (35% fat)
3 bags of jasmine tea (adjust depending on how strong you like it)
6 eggs separated
70g caster sugar
1/4 tsp vanilla extract
demerara sugar (or caster sugar if unavailable)

Method

Preheat oven to 140°C. In a pot, gently bring the milk, cream and tea bags to a boil and allow to brew for around 10 minutes (shorter if using a stronger tea). While the cream is on the heat, separate your eggs (egg separator for the win!), grab the sugar and dump it into the yolks (a little over 1/4 Aussie cup if you’re too lazy to take out your scales). Give it a whisk until it’s combined.

Now pop a kettle of water on. Take out the tea bags, add the vanilla and pour in a slow and steady stream into the egg mix, whisking constantly to prevent it from cooking (note – if you squeeze the teabags into the milk, you’ll get a more intense flavour but will make your brulee an odd shade of grey).

Divide mixture into 4 ramekins and place in a baking tray. Pour the freshly boiled water from your kettle into your baking tray slowly until the water comes up halfway on the ramekins. Bake for 15-25 minutes depending on how flat your ramekins are. The middle should have the slightest of quiver when it’s ready.

Take the ramekins out of the water and allow to cool for at least 20 minutes. If you’re not serving straight away, stick it in the fridge.

Sprinkle a light, even layer of sugar and grab the blowtorch and go crazy until you have the most gorgeous toffeed coating.

I've not yet attempted a creme brulee, but your comments definitely motivate me to give it a try… it sounds so easy (although I suspect it may need a bit of practice on my part!). My favourite lazy and indulgent recipe has got to be brownies – with softened butter, it all comes together so easily in one bowl, and can just be spread out in the tray without any fidgeting. And the batter tastes great, too!

Oooo egg seperator? Have not heard of such a gizmo before! Me want one!
Lazy recipes are so awesome, the less ingredients/cooking tools, the better.
So far my fave would have to be crepes with fresh fruit and cream! And hamburgers!

Egg separator? What the?! Where has this contraption been all my life? Oh wait, bf would probably call it a useless gadget and veto it. The creme brulee looks amazingly good and I'll have to try this as I am 200% behind lazy dessert making.

I love how the yolks sit together in a bowl. Lazy cooking is packet instant pudding or any cake that comes in a box. These look great. I don't have any lazy desserts but Mac and Cheese is my winning lazy meal.

I actually love separating eggs in my bare hands (i don't use the shell either) I love to feel the white slipping through my fingers. I have never attempted a brulee, I always thought it looked too tricky. However I'd like an excuse to buy a blow torch and the way you present the recipe makes it seem too easy!

i cant seperate eggs with the shells, nor with those gadgets that are supposed to do the job. i break the eggs, on at a time, into a small bowl, and scopp the yolk out with my cupped hands.

my lazy go-to dessert/snack is thin pancakes with oodles of maple syrup or honey with whatever fruits or ice cream (whichever is in stock at home). or i just whack them with pbj, or nutella (both always in stock at home), roll 'em up and nosh. bestest fastest snack.

i have never made creme brulee before. there. i said it. i have been tempted maybe a million and one times but i keep putting it off and telling myself: “no blowtorch, no brulee”. i can only imagine how your jasmine tea creme brulee must taste so good! the addition of jasmine tea sounds like it could make the taste of your creme brulee a bit “lighter”? i dont know if i am making sense.
anyway, just to let you know, this post reflects me perhaps about 90%. lazy is sort of my middle name! hahaa. the first lazy recipe i thought of was brownies! then, choux pastry, french pastry dough in that order! :P

This looks beyond tempting. Wow. Your pictures are just beautiful and this recipe looks like i need to make this right now….. Im going to change the tea to earl grey as my husband does nto like Jasmine tea but i am sure it will work out just as well. Perfect post, perfect recipe….

Hardly a recipe, but my lazy go-to is warm toast slathered in peanutbutter with grated dark chocolate on top, and made into a sandwich. Cos I'm classy, he he.

Excellent laziness criteria, particularly the noise one. This also assists with the lazy + sneaky dish, for when you need a treat but don't want to proclaim to the world that you are about to each 6 servings of creme brulee for supper.
